Hell’s Kitchen
One of the most inappropriate business ideas I can think of besides trafficking young women from Southeast Asia and forcing them to work in seedy massage parlors for little to no pay (which has been done to death already) is to open up a restaurant that only serves species that are classified as endangered or generally unacceptable to eat. Below is an example of what my prix fixe dinner menu would look like. I think the price would be somewhere in the $25,000-30,000 range per person not includin

I lived in Austin for seven years and pretty much avoided the whole experience of the SXSW festival. Sure, I went one year, but that was enough for me. It was the most insane experience I ever had. Everybody who is somebody (or wants to be)in music is there, from the label execs and A&R guys to the bands to the denizens of fans making the pilgrimage to the Live Music Capital of the World. And rightly so. This is arguably the biggest music showcase in the United States. Any band that wants t

A friend of Piscos recently went to Joule. Heres her review: Salut Pisco, yes we did visit Joule and enjoyed it enormously. It has more of a casual vibe (one big room with kitchen on a raised platform in the middle weird but seems to work), but the food was exquisitely prepared and served. We special-requested a tasting menu ($75 for seven courses, $35 for wine pairing) which consisted of the following: 1. Savory egg custard served in an eggshell with a tiny sliver of shitake mushroom an

Freezer shortcuts
The freezer can be a great tool for saving time in the kitchen or for saving money or both! I like to buy in bulk and also pre-prep some foods, store it in the freezer, and pull things out when I need them. Here are some of the things I like to do: Meat freezer tricks Buy ground meat in bulk. Split it up into smaller packets, wrapped in plastic wrap or butcher paper, label, and freeze. You can use a food scale (or a postal scale, which is what I do!) to get 1/2 lb. or 1 lb. packets all rea

I ended up with a bread bin full of sticky goo that couldn’t be saved so I started again using Isa’s recipe from Vegan with a Vengeance (see link above) and it came out perfectly. … Nothing special on this one, tomato pasta sauce, pizza cheese (yes, I still haven’t got past cheese on my pizza),…

Speaking of lard, Twice-Cooked Pork is to Szechuan items on a menu as Moo Shu Pork is to Mandarin items: If a Chinese restaurant has any Western Chinese at all, it will have Twice-Cooked Pork. Thank goodness nobody was hurt so we can make jokes like that. Seriously, though, the thought of hundreds of thousands of chili peppers going up in flames is kind of awesome (in the traditional sense, meaning awe-inspiring, not the slang sense meaning good). Here’s the story: HYDERABAD, India - A fire has broken out at one of Indias largest chili markets, burning hundreds of thousands of pounds of chili peppers. Still no end in sight to this winter. The snow is still falling, after falling pretty steadily all day. Thankfully it’s not major accumulation this time around. Just a nice white coating over everything. A little something to perk up the drab late winter, it’s been around a while, grayish looking snow. I have to say when it comes to food and seasonal eating there is nothing more comforting on a day like today than a nice bowl of chili. I will admit to you all now, I am far from a chili expert
